Prince George, B.C. – It’s another first for Prince George.
This fall, the College of New Caledonia Culinary Arts program will host Culinary Team Canada as the team makes a final stop before heading to Switzerland for the “Salon Culinaire Mondial event. Only held every six years, the Swiss competition it is one of the most important international team cooking events in the world. Winners will advance to the IKA Culinary Olympics in Germany in 2016.
CNC Chef Ron Christian says he is “tickled pink” to have the team come to Prince George, which will be the smallest city the Team has ever visited. The team will have made similar stops in Edmonton, Windsor and Halifax before visiting Prince George as they prepare for the competition in Europe.
Chef Christian is a friend of the Team Canada Manager, JC Felicella. “This is a once-in-a-lifetime opportunity for people in northern B.C. to try world-class food, the likes of which Prince George has never seen before.” It will also be an opportunity for Culinary Arts students at CNC to learn from the best in Canada. “I have worked with a few of the Team Canada members and I can tell you, people will kick themselves if they miss this opportunity,” says Chef Christian. “We are really encouraging our students, past and present, to contact us so they can watch and learn from these world renowned chefs in action.”
Culinary Team Canada will use it’s Prince George stop as the last opportunity to finalize its menu for the Swiss competition, and put the menu to the test.
The College is planning a special dinner “An Evening with the Masters” on October 21st at the College’s Gathering Place ( Atrium) . The evening will start with appetizers, and will include wine pairings with each course.

48 ° Pacific Salmon “Broken”
Lobster Foam, Vanilla Oil
Olive Oil Poached Lobster Salad, Hearts of Palm
English Pea Purée, Cured Salmon Roe
Ciabatta Croutons
Lamb Loin, Truffled Veal Roulade
Terrine of Veal Tongue and Sweetbreads
Squash Purée, Carrots, Salsify and Turnip
Celeriac Glazed Bread Pudding
Madeira Jus
White Chocolate Lemon Mousse, Elderflower Gel
Orange Frangipane, Raspberry Sorbet
Almond Hemp Crumble, Ganache
Orange Curd, Honey Meringue
Tickets for this special event are $125 dollars per person. That may seem a little high to some, but this food is of international caliber and as Chef Christian says “Who doesn’t like to eat?”

I notice that Chef Ron Christian was “tickled pink” it wouln’t have anything to do with the bottle of Baja Rosa sitting on the counter of the picture would it? LOL
