Christmas morning breakfast
With all the excitement that Christmas morning brings, sometimes we forget to eat the most important meal of the day, breakfast.
Christmas at my house centers on food all day. As the day goes along we’ll snack on mostly homemade biscotti, chocolates and other treats. But the day starts with a very special meal.
My wife and kids look forward to this breakfast all year because I make this dish only on Christmas morning. French toast made with panettone fresh fruit and balsamic reduction.Panettone bread is seasonal Italian sweet bread that you can find at your local Italian deli or grocery store. You can enjoy it simply by dunking it in your coffee or the way my family prefers, French Toast.
Recipe; slice panettone, not too thin, coat with egg mixture (make sure to add some vanilla and sugar to the egg mixture).heat pan over med-high heat and fry until golden. Place individual slice and garnish with medley of fresh strawberry, cantaloupe, mandarin oranges or any other fruit you may like. Lightly dust with icing sugar and finish with a drizzling of balsamic reduction. Maple syrup in this case won’t work because the panettone is sweet enough.
Cinzia’s wine suggestion: a B.C. sparkling wine or an Italian prosecco mixed with fresh squeezed orange juice.
Remember to have fun in the kitchen and ask your kids to lend a helping hand. It’s never too early to expose them to healthy eating habits.
