Prince George, B.C.- The Holiday season just isn’t complete without gingerbread, and at the College of New Caledonia, Culinary Arts students are baking up a storm.“We provide the gingerbread and the icing” says program head Chef Ron Christian “The students provide the design, the decoration and the hard work to build their creation.”
The completed gingerbread creations are on display in the CNC library, and many will be auctioned off. “The money will be used to make a donation to charity and maybe buy one or two items for our kitchen here” says Chef Christian.
Not all of the creations will be on the auction block.

17 year old Bella Stokes creation, which comes complete with interior lighting and stained glass windows made of melted lifesavers, will be going directly to charity. “My parents and I will be donating this gingerbread creation to the Salvation Army so they can make it part of a Christmas Hamper for a less fortunate family.” Bella is a Duchess Park student, and is taking the Culinary Arts class through the program offered through School District 57 and CNC.
Program head, Chef Ron Christian , says the gingerbread creations have been an annual event in the 12 years he has been at the College. Students are graded not so much on how the final project turned out, but in their dedication and time spent to make the creation.
This year, the creations do stray from the traditional gingerbread house. There is a scene from the Trailer Park Boys, a Venice street (canal) scene, a castle , a pagoda, even an arcade game.
